Ingredients
Serves 4
4 large potatoes
4 tbsp sesame seeds
4 tbsp grated Parmigiano
2 rosemary springs
extra virgin olive oil
salt
pepper
Directions
Peel the potatoes and cut into large fries. Blanch for 5 minutes in a pot of boiling salted water. Drain and pat dry. Place the grated Parmigiano on a baking sheet and roll the potatoes in it until coated. Heat a little olive oil in a large frying pan. Place the potatoes, one layer at a time, in the hot oil, sprinkle with sesame seeds. Fry until golden on both sides. Drain excess fat on kitchen paper and season with salt and pepper.
