Le polpettine di Vivaldo

Meatballs

Ingredients
100 grams beef
100 grams pork
100 grams bread soaked in milk with the excess squeezed out
1 egg
salt
pepper
olive oil
garlic
concentrated tomato paste

Directions
Mix the meat, bread, egg, salt, and pepper in a bowl. Heat up some olive oil in a frying pan. Form the mixture into balls and fry them in the pan while moving them around so they cook evenly. You can serve them like this or continue to make a nice sauce for them.
Dump out the olive oil used for frying and put some hot water, concentrated tomato paste and coarsely chopped garlic (just use your best judgement for quantities here, not too much) in the pan. Cook with the meatballs over low heat until the sauce thickens and serve! We always have this with mashed potatoes (it's really more like a puree) because Italians don't eat meatballs and spaghetti. In case you didn't know, that's an Italian-American thing.

Rating: ★★★★★
The best meatballs ever, they are so soft, moist, and delicious.
