Bastillas di banana al profumo di lavanda

Ingredients
Makes 12
2 ripe bananas, diced
1 tsp dried lavender flowers
1 tsp liquid honey
1/4 tsp ground cinnamon
1 pinch dry thyme
12 sheets of phylo pastry
80 grams butter, melted
powdered sugar

Directions
Pre-heat oven to 200°C (400°F).
Combine bananas, lavender flowers, honey, cinnamon and thyme in a bowl and mix well.
Cut phylo pastry lengthwise into three strips. Place one strip on work surface, brush with melted butter, place another on top of the first, brush with butter, then a third and brush with butter. Place about 1 tbsp of mixture in the left corner and fold over pastry to make a triangle, then continue to fold as if folding a flag. Brush finished parcel with melted butter and place on baking sheet. Repeat with rest of ingredients.
Bake for 10-15 minutes, or until browned. Dust with powdered sugar and serve immediately.

Rating: ★★★★
Very tasty, without being overly sweet. It was pretty dense and a little dry by itself. This would go excellent with tea, coffee, or ice cream.
