Fiori di zucca

Fried zucchini flowers that Graziella made

Ingredients
flour
cold water
ice
zucchini flowers
salt
olive oil

Directions
Mix the cold water and flour together. I couldn't figure out the ratio exactly. Graziella basically said not too much flour because you don't want it to be heavy, so make sure the batter is very light. Then the ice cubes go in, just to keep the batter cold. Add some salt for taste.
Fill a deep pan with olive oil and heat it up to fry the flowers in. Take the zucchini flowers, dip in batter and immediately put in olive oil to fry. Keep turning the flowers until they are golden and lightly brown. Place on plate with paper towels to soak excess oil. Serve hot with more salt on top if preferred.

Graziella said she likes putting some anchovies and mozarella in the middle, but we didn't have it this way because Vivaldo doesn't like it. You could do many variations with this recipe, such as substituting other vegetables or meats for the flowers as the batter is very similar to tempura. Graziella even fried up the excess batter by itself.
