5 eggs
2 potatoes
1 red bell pepper
1 red onion
1 garlic clove
4 sage leaves
80 grams Parmigiano
extra virgin olive oil
salt
pepper
Directions
Pre-heat oven 200°C (400°F)
Grease muffin tin
Peel potatoes and dice fairly small. Wash and clean bell pepper and dice. Slice onions very thin and dice.
Heat a little olive oil in a frying pan. Add garlic, finely chopped, and sage leaves. Add vegetables, season with salt and pepper and cook, on very low heat, for 20 minutes.
In the meantime, beat eggs in a mixing bowl with the grated Parmigiano, season with salt and pepper.
When the vegetables are done, let cool for a few minutes, then stir into eggs. Pour mixture into prepared muffin tin and bake in hot oven for 10 minutes.
