Ricotta al cacao con coulis di frutta


Ingredients
Serves 4-6
400 grams ricotta cheese
2 tbsp sugar
1 tbsp un-sweetened cacao powder
100 grams mixed berries fresh or frozen

Directions
Place the ricotta in a mixing bowl and mix with a fork till it becomes creamy. Add 2/3 of the sugar and 2/3 cacao powder. Mix to blend. Wash or defrost the berries and place in blender with the rest of the sugar and 2 tbsp of water. Blend for a few seconds. Place the ricotta cream on serving dishes and garnish with the berry coulis and remaining cacao powder.

Easy and flavorful, just needs a wafer or something crunchy to balance with the light cream.
