Palline di patate gratinate


Ingredients
Serves 4-6
600 grams potatoes
3 slices of Italian bread, coarsely grated
parsley, finely chopped
extra virgin olive oil
salt
pepper

Directions
Pre-heat oven grill to 200°C (450°F).
Wash and boil potatoes with skins in a large pot. In the meantime, coarsely grate bread in food processor, with 1 tbsp of olive oil. When the potatoes are soft, drain, let cool and peel. Mash in a large mixing bowl, season with salt, pepper, olive oil and chopped parsley. Shape mixture into balls the size of large marbles. Place in roasting tin (1 layer), lined with oven-proof paper. Top with bread crumbs, season with pepper and grill in hot oven for 10 minutes.
