Verdure all'agro con crostini


Ingredients
Serves 4
2 tomatoes
1 cucumber
1 small yellow bell pepper
8 small zucchini
4 bread slices
1 lemon
1 tbsp mustard
extra virgin olive oil
salt
pepper

Directions
Wash all the vegetables. Cut the tomatoes into wedges and remove seeds then dice. Cut the cucumber and pepper into bite size pieces. Cut the zucchini into very thin slices.
In a mixing bowl whisk the lemon juice, 2 tbsp of olive oil, and mustard till well blended. Season with salt and pepper.
Dice the bread and toast in a frying pan with a little olive oil till golden. Season the vegetables with the vinaigrette and mix well. Add bread croutons just before serving.

I'm not a huge fan of cucumbers, but the croutons were the best part. Just don't let them get soggy because they do, fast. I would even serve the croutons on the side.
