Ingredients

8 piadine (type of Italian flat bread)
150 grams mozzarella fior di latte
2 tomatoes
2 tbsp mustard
4 tbsp grated Parmigiano
1 spring onion
chives
mustard seeds (optional)
extra virgin olive oil
salt
pepper
Directions
Preheat oven to 180°C (350°F)
Line baking tray with oven-proof paper
Wash and dry the tomatoes, slice and leave to drain excess liquid in a colander. Cut the mozzarella cheese into thin slices.
Spread 4 piadine with mustard and cover with an even layer of mozzarella then a layer of tomato. Dry off excess liquid with kitchen paper. Place on prepared baking sheets and bake in pre-heated oven for about 5 minutes. Remove from oven, top each one with a remaining piadina (like a sandwich), brush with a little olive oil, sprinkle with grated Parmigiano cheese. Place in oven under hot grill for 1 minute.
In the meantime, wash and finely chop the onion and the remaining tomatoes. Cut the piadine sandwiches into squares and garnish with the onion and tomato mixture, a drizzle of olive oil and chopped chives. Sprinkle with toasted mustard seeds if used.
